Nutritional and Phenolic Antioxidant Properties of Pakistani Wheat Varieties as Influenced by Planting Period and Variety

The objective of this study was to investigate the effects variety and plant environment on nutritional composition, phenolic contents antioxidant activities from commercial wheat cultivars grown in Pakistan. Chemical total were measured twenty-seven spring varieties for two cropping years. Preliminary assessment strength extracts carried out by evaluation (TPC), activity (AA) free radical scavenging (FRSA). grain length, width a thousand kernel weight different ranged 6.75-6.77 mm, 3.44-3.45 mm 42.95-45.16 g respectively. Similarly, moisture, ash, crude fat, fiber, protein, wet gluten, dry flour gliadins, glutenins SDS-sedimentation value varied 10.23-10.61%, 1.47-1.48%, 1.16-1.21%, 1.37-1.40%, 11.86-12.02%, 25.39-25.46%, 8.85-8.87%, 0.46-0.52%, 0.46-0.49% 24.99-25.85 ml respectively among varieties. In same way, results contents, (DPPH assay) via beta carotene bleaching assay 12.40-11.73 mg GE/g, 18.48-18.99% 14.23-15.97% Our research clearly indicated that variety, input conditions, environmental genotypic variations gave properties.
